The production area of Porchetta di Ariccia IGP is the whole territory of the town of Ariccia near Rome, in the Italian region Lazio. "Porchetta di Ariccia" is obtained from female pigs whose meat is notoriously lean and tasty. The denomination "Porchetta di Ariccia IGP" is allowed to type only selected pigs and a particular kind of manufacturing processes. Porchetta differentiates from other products for its savoury meat, whose colour is white or pink and enriched with the lines of rosemary, sage, pepper and garlic. The crispness of the crust, which is one of the main characteristics of the product, is obtained through proper cooking and it remains unchanged even after several days from the baking. Gluten free.
